Buffalo chicken salad

A hearty 2-serving salad with seared buffalo chicken, pearled farro, crisp romaine, celery, tomatoes, avocado, and blue cheese. The grain makes it substantial enough for lunch or dinner, while the yogurt-blue cheese dressing keeps the heat balanced and creamy without overwhelming the vegetables.

For 4 servings, use a 12-inch skillet or cook the chicken in two batches so it browns instead of steaming. The farro can be doubled in a larger saucepan without changing the heat. Do not simply double the skillet sauce in a crowded pan, because too much liquid will thin the glaze and reduce browning.

Before you cook

What to get ready

Mixing bowl, colander or salad spinner, cutting board and small dressing bowl.

Cook farro separately and mix the yogurt-blue-cheese dressing before searing chicken.

If something needs adjusting

Greens wilt under hot farro

Cool farro promptly in a shallow layer if serving cold, or add it only when eating.

A packed lunch loses texture

Pack dressing and crisp toppings separately, then combine just before eating. Keep perishable ingredients cold during transport.

Store for later

Refrigerate prepared ingredients promptly in covered containers. Keep dressing separate when possible and serve cold; use an insulated bag with ice packs for transport.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Use extra celery and cooked chicken in a soup.

Tips, swaps and questions

A little kitchen know-how

For the best texture, let the cooked farro cool a few minutes before tossing it with the greens, and slice the chicken only after the buffalo glaze has rested briefly. If you want a milder salad, use 2 tbsp hot sauce plus 1 tbsp water in the pan sauce, but keep the butter so the glaze still clings to the meat.

Make it work for you

Pearled farro can be swapped 1:1 for cooked barley or brown rice if you want a softer grain, but cook it separately before assembling. Blue cheese can be replaced with feta for a sharper, saltier finish, though the dressing will lose its classic buffalo-chicken character and may need an extra spoonful of yogurt to stay creamy.

Use more of your chicken breast and romaine lettuce in cobb salad.

Can I make this ahead without the salad getting soggy?

Yes. Cook the farro, chicken, and dressing up to 3 days ahead and refrigerate them separately. Keep the greens, tomatoes, avocado, and dressing apart until serving, then rewarm the chicken to 165 F and assemble just before eating. If the dressing thickens in the fridge, whisk in a teaspoon or two of water.
