Kidney bean salad
A crisp kidney bean salad with celery, cucumber, red onion, parsley, and a sharp Dijon vinaigrette. It makes 2 generous lunch servings or 4 side-dish servings, with tender beans balanced by crunchy vegetables and a bright, lightly garlicky dressing that improves after a short chill.

Estimated calories and US ingredient costs.
For 4 servings, use a 2-quart bowl so the beans can be folded without crushing. Double the ingredients exactly and keep the same 15-minute chill, then stir once more before serving. For larger batches, add the dressing in a wide bowl first and toss in two additions so the vegetables stay evenly coated.

Ingredients
For 2 people
- 1 (15 oz) can kidney beans, drained and rinsed
- 1/2 cup diced celery (50 g)
- 1/4 cup finely diced red onion (40 g)
- 1/2 cup diced cucumber, seeded (75 g)
- 2 tbsp chopped fresh parsley (8 g)
- 1 tsp minced garlic (3 g)
- 2 tbsp olive oil (27 g)
- 2 tbsp red wine vinegar (30 g)
- 1 tsp Dijon mustard (5 g)
- 1/2 tsp kosher salt (3 g)
- 1/4 tsp black pepper (1/2 g)
Method
- Drain the beansPour the kidney beans into a colander, rinse well under cool running water, and let them drain while you prepare the vegetables. Shake off excess water so the dressing clings instead of sliding off the beans.
- Prep the crunchy vegetablesDice the celery, finely dice the red onion, and seed and dice the cucumber. Chop the parsley and mince the garlic. Keep the pieces small and even so every forkful has a mix of bean, crunch, and herb.
- Whisk the vinaigretteIn a medium bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, kosher salt, and black pepper until the dressing looks slightly thickened and emulsified. If the mustard separates, whisk a few seconds longer before adding the beans.
- Coat the beans firstAdd the drained kidney beans to the bowl and fold gently with a spoon or silicone spatula until every bean is glossy. Coating the beans first helps the flavor reach the center of the salad instead of sitting only on the vegetables.
- Add the vegetables and herbsFold in the celery, red onion, cucumber, and parsley. Mix just until combined so the cucumber stays crisp and the beans stay intact. If a puddle of dressing collects at the bottom, stir from the bottom once more and let it sit a minute to absorb.
- Chill briefly to meldCover the bowl and refrigerate for 15 minutes. This resting time lets the onion soften slightly and the vinegar flavor settle into the beans. Do not skip it if you want a more cohesive salad rather than a sharply dressed bean mix.
- Taste, adjust, and serveGive the salad one final gentle stir and taste a bean from the center of the bowl. If the dressing seems too tight after chilling, add 1 teaspoon red wine vinegar at a time and toss. Spoon into bowls or onto plates and serve cold or cool. Refrigerate leftovers within 2 hours and keep chilled; reheat is not needed.
Before you cook
What to get ready
Mixing bowl, colander or salad spinner, cutting board and small dressing bowl.
Use canned or fully cooked kidney beans; rinsing raw dried beans does not make them ready for salad.
If something needs adjusting
Dressing gets diluted
Dry rinsed beans and seeded cucumber before combining.
A packed lunch loses texture
Pack dressing and crisp toppings separately, then combine just before eating. Keep perishable ingredients cold during transport.
Store for later
Refrigerate prepared ingredients promptly in covered containers. Keep dressing separate when possible and serve cold; use an insulated bag with ice packs for transport.
Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions
A little kitchen know-how
For the best texture, drain the beans very well and cut the vegetables small enough to cling to the dressing. This salad tastes even better after 30 to 60 minutes in the refrigerator, but if you make it ahead for longer, hold back a spoonful of dressing and stir it in just before serving to refresh the sheen.
Make it work for you
Swap red wine vinegar for lemon juice if you want a brighter, fruitier finish, but expect a sharper, less rounded dressing. You can also replace half the cucumber with diced bell pepper for more crunch. If you use salted canned beans, reduce the kosher salt slightly and taste after chilling instead of adding the full amount up front.
Use more of your red onion and cucumber in chicken satay.
Can I make kidney bean salad ahead of time?
Yes. In fact, this salad benefits from a short make-ahead rest because the beans absorb the vinaigrette and the onion mellows. For the best texture, make it up to 24 hours ahead, keep it refrigerated in a covered container, and stir again before serving. If it looks dry, add a teaspoon or two of vinegar.
