Ingredients
For 2 people
- 2 boneless chicken breasts (about 12 oz total)
- 12 oz baby potatoes, halved
- 2 carrots, cut into thin batons
- 2 tbsp olive oil, divided

- 1/2 cup plain Greek yogurt
- 1/2 tsp kosher salt, divided
- 1/4 tsp black pepper
- 2 tbsp chopped parsley

Before you cook
What to get ready
Large rimmed sheet pan, mixing bowl and instant-read thermometer.
Mix the lemon yogurt and refrigerate it separately. Cut carrots evenly; keep raw chicken and its utensils away from the sauce and vegetables that will be eaten raw.
If something needs adjusting
Potatoes are pale
Dry their cut surfaces, spread them cut-side down and leave space. If the chicken finishes first, remove it and continue roasting the vegetables.
Chicken is drying out
Use evenly thick pieces and start checking before the upper time estimate. Remove each piece when its thickest part reaches 165°F.
Store for later
Store chicken, vegetables and yogurt separately. Reheat the cooked chicken and vegetables to 165°F; keep the yogurt cold and add after reheating.
Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.
Make the ingredients go further
Compare boneless thighs and breast by usable weight. Thighs may need different cooking time; both must reach 165°F. Use remaining yogurt in a sauce for another meal.

Tips, swaps and questions
A little kitchen know-how
Use similarly sized chicken breasts so they finish together. If the vegetables need longer, remove the cooked chicken and return the pan to the oven.
Make it work for you
Swap carrots for broccoli florets; add the broccoli with the chicken so it does not overcook.
Have more chicken to use? Try a different seasoning in chicken fajita rice bowls.
Can I use chicken thighs?
Yes. Use boneless thighs and cook to at least 165°F in the thickest part. They may need a few extra minutes.
