Breakfast tacos

Warm flour tortillas hold soft scrambled eggs, crisped breakfast potatoes, melted cheddar, and a fresh salsa finish. This recipe makes 4 tacos, enough for 2 servings, with a skillet-cooked filling that stays sturdy and flavorful without becoming dry. The potatoes get a head start so the eggs can cook gently and finish just as the tortillas are warmed.

For 4 or more servings, use a 12-inch skillet or cook the potatoes in two batches so they brown instead of steaming. Keep the egg scrambling heat gentle regardless of batch size, and warm tortillas in a covered stack so they stay soft. Do not scale the cook time linearly; smaller amounts of eggs and tortillas finish at about the same speed.

Par-cook and crisp the potatoes

~13 min

Par-cook and crisp the potatoes.

Heat a 10-inch skillet over medium-high heat and add the 1 tbsp olive oil.

Add the 8 oz russet potato cubes, 1/4 tsp black pepper, and 1/4 tsp of the kosher salt.

Cook, stirring every minute or so, until the potatoes are browned on several sides and tender in the center, 10 to 12 minutes.

If they start to stick before they are done, add 1 tbsp water and cover for 1 minute, then uncover and continue cooking until the water evaporates.

Ingredients
  • 8 oz total for recipeRusset potato
  • 1 tbspOlive oil
  • 1/4 tspKosher salt
  • 1/4 tspBlack pepper
Step 2

Whisk the eggs

~6 min

Whisk the eggs.

In a medium bowl, whisk the 4 large eggs with the 2 tbsp whole milk and the remaining 1/4 tsp kosher salt until the mixture is uniform and a little foamy.

The milk helps the eggs stay tender, but do not overbeat or they can cook up watery.

Ingredients
  • 1/4 tspKosher salt
  • 4Large eggs
  • 2 tbspWhole milk
Step 3

Scramble gently

~3 min

Scramble gently.

Reduce the skillet heat to medium-low and push the potatoes to one side of the pan.

Add the 1 tbsp unsalted butter to the open space.

Once melted, pour in the egg mixture.

Stir slowly with a silicone spatula, scraping the bottom and folding the curds over themselves until the eggs are just set but still glossy, about 2 to 3 minutes.

If you are checking with a thermometer, the eggs should reach 160 F.

Turn off the heat before they look fully dry, since they will finish from residual heat.

  • 1 tbspUnsalted butter
Step 4

Warm the tortillas

~2 min

Warm the tortillas.

Warm the 4 small flour tortillas one at a time in a dry skillet over medium heat for about 20 seconds per side, or stack them wrapped in a damp paper towel and microwave for 30 to 40 seconds.

Keep them covered so they stay pliable and do not crack when filled.

Ingredients
  • 4Small flour tortillas
Step 5

Fill the tacos

~1 min

Fill the tacos.

Divide the potatoes and scrambled eggs evenly among the 4 tortillas.

Top each taco with 1/2 oz shredded cheddar cheese, 1/2 oz salsa roja, about 1/4 oz diced white onion, and 1 1/2 tsp chopped fresh cilantro.

The cheese will soften from the hot filling; if it does not, cover the filled tacos loosely for 1 minute before serving.

Ingredients
  • 1/2 ozShredded cheddar cheese

Before you cook

What to get ready

Wide skillet, spatula, separate filling bowls and a clean towel for warmed tortillas.

Dice potatoes small and keep the egg mixture separate until the potatoes are nearly crisp.

If something needs adjusting

Potatoes brown but remain hard

Par-cook until a fork enters, then dry before crisping; the skillet alone may brown them too early.

A larger batch goes cold before serving

Prepare toppings first, keep tortillas covered briefly and assemble at the table rather than filling every tortilla in advance.

Store for later

Refrigerate perishable fillings separately from tortillas and cold toppings. Reheat cooked fillings to 165°F, then warm tortillas and assemble.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Use extra tortillas with a bean-and-cheese filling.

Tips, swaps and questions

A little kitchen know-how

For the best texture, cook the potatoes first and keep the egg mixture moving over medium-low heat. If your skillet runs hot, pull it off the burner a little earlier than you think and let the eggs finish from the pan’s residual heat. That keeps them soft instead of rubbery, which matters a lot in tacos.

Make it work for you

Swap the cheddar for pepper jack if you want more heat, or use corn tortillas instead of flour tortillas for a lighter, more fragile taco. Corn tortillas should be warmed directly on a dry skillet and stacked in a towel so they stay flexible. If you use a saltier salsa, hold the eggs closer to 0.25 tsp salt to keep the filling balanced.

Use more of your russet potato and flour tortillas in breakfast bean burritos.

Can I make these breakfast tacos ahead for busy mornings?

Yes, but keep the components separate for the best texture. Cook the potatoes and scramble the eggs, then cool them quickly and refrigerate within 2 hours. Reheat the filling to 165 F before assembling, and warm the tortillas fresh. Add the salsa, onion, and cilantro at the end so the tacos do not turn soggy.
