Greek meatball rice bowls

Juicy oregano-and-garlic meatballs are baked until browned, then tucked over fluffy rice with a bright cucumber-yogurt sauce, tomato-cucumber salad, and feta. This makes 2 hearty bowls with enough contrast for a full meal: warm rice, savory meatballs, cool sauce, and crisp vegetables.

For 4 servings, use 2 baking sheets so the meatballs do not crowd, and cook the rice in a wider pot to prevent boil-over. Keep the oven temperature the same; only the pan count and ingredient amounts should change. If doubling the rice, use a 2-quart or larger saucepan with a tight lid. The calorie estimate assumes the listed oil is eaten and includes the full amount of meatball oil; any excess oil left on the pan is not counted, since absorption can vary.

Step 1

Cook the rice

~15 min cook

Cook the rice.

Rinse 1 cup long-grain white rice under cool water until the water runs mostly clear.

Combine the rice, 2 cups water, and 1/2 tsp kosher salt in a small saucepan.

Bring to a boil over medium-high heat, then cover, reduce the heat to low, and cook for 15 minutes without lifting the lid

Ingredients
  • 1 cup total for recipeLong-grain white rice, uncooked
  • 2 cupsWater
  • 1/2 tspKosher salt
Step 2

Remove from the heat and let it stand, covered

After ~15 min

Remove from the heat and let it stand, covered, for 5 minutes so the grains finish steaming and stay fluffy.

Step 3

Mix the meatball mixture

~1 min

Mix the meatball mixture.

Heat the oven to 425 F and line a rimmed baking sheet with parchment.

In a medium bowl, combine 1 lb ground beef, 1/2 cup panko breadcrumbs, 1 large egg, 2 tbsp grated yellow onion, 2 tsp minced garlic, 2 tbsp chopped parsley, 1 tbsp chopped mint, 1 tsp dried oregano, 1/2 tsp ground cumin, 3/4 tsp kosher salt, and 1/2 tsp black pepper.

Mix just until evenly combined; overmixing will make the meatballs dense.

Ingredients
  • 3/4 tspKosher salt
  • 1 lbGround beef
  • 1/2 cupPanko breadcrumbs
  • 1Large egg
  • 2 tbspGrated yellow onion
  • 2 tspGarlic
  • 2 tbspFresh parsley
  • 1 tbspFresh mint
  • 1 tspDried oregano
  • 1/2 tspGround cumin
  • 1/2 tspBlack pepper
Step 4

Shape and bake the meatballs

~14 min

Shape and bake the meatballs.

With damp hands, form the mixture into 12 meatballs, about 1 1/2 inches each, and arrange them on the prepared sheet with a little space between them.

Brush or lightly drizzle with 1 tbsp olive oil.

Bake for 12 to 14 minutes, turning once halfway through if the bottoms are browning unevenly, until the centers reach 160 F and the exteriors are browned.

Step 5

Stir together the yogurt sauce

~1 min

Stir together the yogurt sauce.

While the meatballs bake, make the sauce in a small bowl by combining 3/4 cup plain Greek yogurt, 1/2 cup grated cucumber that has been squeezed dry, 1 tsp lemon juice, 1 tsp minced garlic, 1 tbsp chopped dill, and 1/4 tsp kosher salt.

Stir until smooth and thick enough to dollop.

If it seems loose, let it sit a few minutes so the cucumber releases less liquid into the yogurt.

Ingredients
  • 1/4 tspKosher salt
  • 1 tspGarlic
  • 3/4 cupPlain Greek yogurt
  • 1 tbspFresh dill
Step 6

Toss the tomato cucumber salad

~1 min

Toss the tomato cucumber salad.

In another bowl, combine 1 cup halved cherry tomatoes, 1/2 cup diced cucumber, 1/4 cup thinly sliced red onion, 1 tbsp lemon juice, 1 tsp olive oil, and 1/8 tsp kosher salt.

Toss gently so the tomatoes keep their shape.

This quick salad should taste bright and lightly seasoned, not saucy.

Ingredients
  • 1/8 tspKosher salt
  • 1 cup total for recipeCherry tomatoes, halved
  • 1/2 cupDiced cucumber

Before you cook

What to get ready

Mixing bowl, rimmed tray or wide skillet as directed, broad spatula and instant-read thermometer.

Squeeze grated cucumber for the yogurt sauce and keep tomato salad separate from warm rice.

If something needs adjusting

Sauce becomes watery

Drain cucumber before mixing and add the sauce only at serving.

Portions finish at different times

Shape equal-sized portions and check several of the largest centers. Ground poultry needs 165°F; ground beef or lamb needs 160°F.

Store for later

Refrigerate cooked portions in shallow containers, with sauce if the recipe includes it. Reheat centers to 165°F and keep any cold yogurt sauce separate.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the best texture, grate the onion very finely and squeeze the cucumber firmly before mixing the sauce. If you prefer a lighter bowl, use 90% lean ground beef and reduce the oil on the meatballs to a light brush; the meatballs will be a little less rich but still flavorful. Avoid packing the meatballs too tightly so they stay tender.

Make it work for you

You can swap the ground beef for ground lamb in the same amount for a more traditional Greek flavor, but expect a richer, slightly fattier result. If you use lamb, keep the same baking time and check for 160 F in the center. For a tangier finish, replace half the yogurt with labneh, which makes the sauce thicker and less likely to loosen the rice.

Use more of your Greek yogurt and panko breadcrumbs in chicken patties with zucchini.

Can I make the meatballs ahead of time?

Yes. Shape the meatballs up to 1 day ahead and refrigerate them covered on the baking sheet or in a container. You can also bake them ahead and reheat them on a sheet pan at 350 F until hot through to 165 F, then assemble the bowls with freshly cooked rice and cold sauce. Store leftovers refrigerated within 2 hours and use within 3 to 4 days.
