Green shakshuka

This Middle Eastern-inspired green shakshuka makes 2 hearty servings: eggs poached in a garlicky skillet of zucchini, scallions, jalapeño, spinach, parsley, and cilantro. Lemon and feta keep the sauce bright, while cumin and coriander add warmth. The greens cook down to a spoonable bed that holds the eggs without turning watery.

This recipe scales best in a wider skillet rather than a deeper pot. For 4 servings, use a 12-inch skillet and 8 eggs; for 6, split the mixture between two skillets so the greens do not steam and the eggs poach evenly. Keep the sauce shallow before adding the eggs.

Step 1

Prep the skillet ingredients

~2 min

Prep the skillet ingredients.

Chop the 4 oz yellow onion, 2 oz scallions, 1 oz jalapeño, 8 oz zucchini, 1 oz parsley, and 1 oz cilantro so they are ready to go.

Crack the 4 large eggs into individual ramekins or small cups if you want cleaner poaching.

Set a 10-inch skillet with a lid over medium heat and keep the 1 cup vegetable broth nearby.

Ingredients
  • 4 oz total for recipeYellow onion
  • 2 ozScallions
  • 8 ozZucchini
  • 1 ozFresh parsley
  • 1 ozFresh cilantro
Step 2

Soften the vegetables

~8 min

Soften the vegetables.

Add 1 tbsp olive oil to the hot skillet, then cook the 4 oz onion, 2 oz scallions, 1 oz jalapeño, 8 oz zucchini, and 1/2 tsp kosher salt over medium heat for 6 to 8 minutes, stirring often.

The onion should turn translucent and the zucchini should lose its raw edge with a few browned spots for body.

Ingredients
  • 1 tbspOlive oil
  • 4 ozYellow onion
  • 2 ozScallions
  • 8 ozZucchini
  • 1/2 tspKosher salt
Step 3

Bloom the spices

~1 min

Bloom the spices.

Stir in 1 tbsp minced garlic, 1 tsp ground cumin, 1/2 tsp ground coriander, 1/4 tsp ground turmeric, and 1/4 tsp black pepper.

Cook for 30 to 45 seconds until fragrant, keeping the garlic moving so it does not scorch.

The pan should smell warm and aromatic, not sharp or bitter.

Ingredients
  • 1 tbspGarlic
  • 1 tspGround cumin
  • 1/2 tspGround coriander
  • 1/4 tspGround turmeric
  • 1/4 tspBlack pepper
Step 4

Build the green sauce

~4 min

Build the green sauce.

Pour in the 1 cup low-sodium vegetable broth and add the 3 oz baby spinach.

Cook for 2 to 3 minutes, stirring, until the spinach collapses and the mixture looks glossy and spoonable.

Stir in the 1 oz chopped parsley, 1 oz chopped cilantro, and 2 tbsp lemon juice, then simmer uncovered for 1 minute if the sauce still looks loose.

Ingredients
  • 1 cupLow-sodium vegetable broth
  • 3 ozBaby spinach
  • 1 ozFresh parsley
  • 1 ozFresh cilantro
  • 2 tbspLemon juice
Step 5

Make wells for the eggs

~1 min

Make wells for the eggs.

Reduce the heat to low.

Use the back of a spoon to make 4 shallow wells in the greens, spacing them evenly so the eggs have room to set.

If the sauce is too thick to hold a well, loosen it with a small splash of broth from the pan edge; if it is too thin, simmer 1 minute longer before adding the eggs.

Ingredients
  • 4 total for recipeLarge eggs
Step 6

Poach under a lid

~8 min

Poach under a lid.

Slide 1 egg into each well, then cover the skillet and cook for 5 to 7 minutes over low heat.

The whites should turn opaque and set, and the yolks should reach 160 F for food safety, which means they will be jammy rather than runny.

If the tops of the eggs are still translucent, cover for 1 minute more.

Step 7

Finish with feta

~3 min

Finish with feta.

Uncover the skillet and scatter the 2 oz crumbled feta over the greens and eggs.

Cook uncovered for 30 seconds just to warm the cheese, then take the pan off the heat and let it stand for 2 minutes so the sauce settles around the eggs instead of spilling across the plate.

Ingredients
  • 2 ozFeta cheese, crumbled
Step 8

Serve right away

~1 min

Scrape the pan bottom so the browned zucchini and onion bits are included, since they give the dish its savory depth.

Ingredients
  • 4 oz total for recipeYellow onion
  • 8 oz total for recipeZucchini
Step 9

Serve meal

~1 min

Once all dishes are cooked and ready, plate and serve the meal together.

Before you cook

What to get ready

Nonstick or well-seasoned skillet, lid if directed, spatula and small egg bowl.

Chop greens and herbs before reducing the zucchini base; make clear wells for each egg.

If something needs adjusting

Sauce is too loose to hold eggs

Reduce the vegetable liquid first; adding eggs to a watery base makes it harder to control their cooking.

Eggs set unevenly

Use gentle heat and an even layer. Cook ordinary eggs until whites and yolks are firm; egg mixtures should reach 160°F.

Store for later

Refrigerate cooked egg dishes promptly in shallow containers. Reheat leftovers to 165°F; for the best texture, prepare fresh eggs over any separately stored vegetable base.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the best texture, let the zucchini brown a little before you add the spinach. That small amount of caramelization gives the sauce enough structure to cradle the eggs, which is especially helpful in a green shakshuka where excess moisture can make the pan taste steamed instead of savory.

Make it work for you

Goat cheese can replace feta for a creamier finish, but add it after the eggs cook so it does not melt away. If you swap spinach for baby kale, cook the greens 1 to 2 minutes longer before poaching because kale needs more time to soften and holds a little more moisture.

Use more of your eggs and zucchini in zucchini egg skillet.

Can I use frozen spinach in green shakshuka?

Yes. Thaw 3 oz frozen spinach and squeeze it very dry first, then add it after the zucchini is softened. Frozen spinach carries extra water, so simmer the sauce a minute longer before the eggs go in. That keeps the skillet concentrated enough for the eggs to poach cleanly.
