This recipe scales well to 4 servings on one full sheet pan or 6 servings on two pans with space between pieces. Keep the oven at 450 F and use the same roasting time, checking early if the salmon cubes are smaller than 1 1/2 inches. For larger batches, rotate pans halfway through for even browning.

Step 1

Mix the tikka marinade

~5 min

Mix the tikka marinade.

In a medium bowl, combine the 1/2 cup Greek yogurt, 1 tablespoon lemon juice, 1 teaspoon minced garlic, 1 teaspoon minced fresh ginger, 1 tablespoon neutral oil, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/4 teaspoon turmeric, 1/4 teaspoon cayenne pepper, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.

Stir until the spices are fully dispersed and the marinade is thick enough to coat the salmon without running off.

Ingredients
  • 12 oz total for recipeSalmon fillet, skinless
  • 1/2 cup total for recipePlain Greek yogurt
  • 1 tablespoonLemon juice
  • 1 teaspoonGarlic
  • 1 teaspoonFresh ginger
  • 1 tablespoonNeutral oil
  • 1 teaspoonGround coriander
  • 1 teaspoonGround cumin
  • 1 teaspoonPaprika
  • 1/4 teaspoonTurmeric
  • 1/4 teaspoonCayenne pepper
  • 1/2 teaspoonKosher salt
  • 1/4 teaspoonBlack pepper
Step 2

Coat and rest the salmon

~30 min cook

Coat and rest the salmon.

Pat the 12 ounces of salmon cubes dry, add them to the bowl, and fold gently until every surface is coated.

Cover and refrigerate for 20 to 30 minutes.

This short rest is enough for flavor without breaking down the fish texture the way a long yogurt soak can.

Step 3

Check salmon

After ~30 min

Check Salmon tikka and continue when ready.

Step 4

Heat the oven and pan

~4 min

Heat the oven and pan.

Set the oven to 450 F.

Line a sheet pan with foil or parchment and brush it with 1 teaspoon oil.

If you have a wire rack that fits the pan, use it for more even browning; otherwise, roast directly on the lined pan.

Step 5

Arrange for roasting

~3 min

Arrange for roasting.

Lay the marinated salmon pieces on the prepared pan with a little space between each cube.

Scrape off only excess marinade that would puddle, but leave a thick coating on the fish so the yogurt can brown and form a tikka-style crust.

Discard any marinade that touched the raw salmon.

Step 6

Roast until just cooked through

~15 min

Roast until just cooked through.

Roast for 10 to 15 minutes, turning the pieces once halfway through if you want more even color.

The salmon is done when it flakes easily and reaches 145 F at the center.

Avoid overcooking, since the marinade can make the surface look done before the middle is finished.

Before you cook

What to get ready

Rimmed baking tray or shallow baking dish, fish spatula and instant-read thermometer.

Cut salmon into similar cubes and keep the yogurt marinade refrigerated.

If something needs adjusting

Yogurt coating burns in spots

Leave only a thin coating on the fish and move the tray away from direct top heat.

Different portions finish unevenly

Choose pieces of similar thickness and check them individually for 145°F. Remove thin portions while thicker ones finish.

Store for later

Store fish in a covered shallow container and refrigerate promptly. Reheat gently to 165°F, keeping fresh garnishes separate until serving.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the best color, keep the salmon pieces in one layer and do not crowd the pan. If the marinade seems too loose, drain the yogurt a little longer next time so it clings better. Refrigerate leftovers within 2 hours.

Make it work for you

If you want a smokier profile, replace half the paprika with smoked paprika. If you are out of Greek yogurt, use thick plain yogurt and drain off excess liquid in a fine-mesh strainer for 10 minutes first, since thin yogurt can slide off and steam the fish instead of browning it.

Use more of your Greek yogurt and lemon juice in beef kofta.

Can I cook salmon tikka on the stovetop instead of in the oven?

Yes. Use a large nonstick or well-seasoned skillet over medium-high heat with a thin film of oil, then cook the salmon in batches so the pieces are not crowded. Sear the first side until browned, turn carefully, and finish just until the center reaches 145 F. The stovetop version browns faster, so watch closely to avoid scorching the yogurt marinade.
