Sausage potato tray bake
A hearty sheet-pan dinner of turkey sausage patties, roasted potatoes, onions, and peppers finished with parsley and a little Dijon pan glaze. The turkey is seasoned like sausage, shaped into rustic patties, and baked alongside the vegetables so everything lands on the tray hot and well browned. Makes 2 servings for a weeknight dinner.

Estimated calories and US ingredient costs.
For 4 servings, use two sheet pans or one very large half-sheet pan and keep the vegetables in a single layer. Do not simply double the pile on one pan, because steaming prevents browning. If scaling up, keep the patties about the same thickness and use the same oven temperature; add pans rather than changing heat.

Ingredients
For 2 people
- 12 oz Yukon Gold potatoes, cut into 1-inch chunks
- 6 oz yellow onion, cut into 1/2-inch wedges
- 4 oz red bell pepper, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp Dijon mustard
- 1 tsp maple syrup
- 1 tsp apple cider vinegar
- 1 tbsp chopped fresh parsley
- 8 oz ground turkey
- 1 tsp fennel seed, lightly crushed
- 1 tsp smoked paprika
- 1/2 tsp dried sage
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 large egg
- 1 tbsp breadcrumbs
Method
- Heat the oven and season the vegetablesSet the oven to 425 F and line a large rimmed sheet pan with parchment or foil for easier cleanup. Put the 12 oz Yukon Gold potatoes, 6 oz yellow onion, and 4 oz red bell pepper on the pan. Drizzle with 1 tbsp olive oil, sprinkle with 1/2 tsp kosher salt and 1/4 tsp black pepper, then toss directly on the pan until everything is lightly coated and spread into a single layer.
- Mix the turkey sausage mixtureIn a medium bowl, combine 8 oz ground turkey, 1 tsp lightly crushed fennel seed, 1 tsp smoked paprika, 1/2 tsp dried sage, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp kosher salt, 1/4 tsp black pepper, 1 large egg, and 1 tbsp breadcrumbs. Mix just until evenly combined so the patties stay tender; overmixing makes the texture dense.
- Shape and start roastingDivide the turkey mixture into 4 equal portions and shape each into a thick oval patty about 1/2 inch thick. Push the vegetables to make room and nestle the patties on the sheet pan with a little space between them. Bake for 18 minutes, until the potatoes are starting to soften and the bottoms of the patties have begun to brown.
- Flip and finish the tray bakeRemove the pan from the oven and use a spatula to turn the patties. Stir and spread the vegetables so any cut sides facing the pan can brown. Return the tray to the oven for 12 to 15 minutes more, until the turkey reaches 165 F in the center and the potatoes are tender with deep golden edges.
- Make the quick mustard glazeWhile the tray bakes, stir together 1 tbsp Dijon mustard, 1 tsp maple syrup, and 1 tsp apple cider vinegar in a small bowl.
- Glaze and restTransfer the cooked patties and vegetables to a serving platter. Spoon the mustard glaze over the hot potatoes and sausages, then sprinkle with 1 tbsp chopped parsley. Rest for 5 minutes so the juices settle before serving.
- Serve hot from the trayPlate the turkey sausage patties with the roasted potatoes, onions, and peppers. Spoon any glaze and pan juices over the top for moisture and serve immediately while the edges are still crisp.
Before you cook
What to get ready
Rimmed baking tray or oven-safe dish, tongs, oven mitts and instant-read thermometer.
This recipe makes turkey sausage portions from ground meat; shape them evenly alongside similarly sized potatoes.
If something needs adjusting
Turkey finishes before potatoes soften
Remove portions once they reach 165°F and continue roasting potatoes before glazing.
Browning does not match doneness
Use a thermometer in the thickest meat, away from bone, and cook poultry to 165°F. Shield a darkening top while the center finishes.
Store for later
Refrigerate cooked poultry in shallow portions. Reheat to 165°F; keep crisp coatings uncovered for part of reheating if needed for texture.
Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.
Make the ingredients go further
Use remaining ground turkey in meatballs rather than buying packaged sausage.

Tips, swaps and questions
A little kitchen know-how
For the best browning, keep the vegetables in a single layer and avoid crowding the pan. If your sheet pan is small, use two pans rather than stacking everything onto one. The turkey patties should be shaped thick enough to stay juicy, but not so thick that the centers lag behind the potatoes.
Make it work for you
If you do not have Yukon Gold potatoes, use red potatoes cut to the same size so they roast evenly. You can swap the parsley for chopped chives or dill, but keep the Dijon in the glaze because its tang helps cut the richness of the turkey. Do not replace the turkey with a much leaner meat without adding moisture, or the patties can dry out.
Use more of your yellow onion and apple cider vinegar in beef and cabbage skillet.
Can I make this tray bake ahead?
Yes. Roast the vegetables and bake the turkey patties, then cool quickly and refrigerate within 2 hours. Store covered for 3 to 4 days. Reheat on a sheet pan at 350 F until everything reaches 165 F, adding a small splash of water only if the potatoes seem dry. Add the parsley after reheating for fresher flavor.
