Turkey meatloaf

This small-batch turkey meatloaf bakes in an 8x4-inch loaf pan with sautéed onion, panko, egg, and a tangy ketchup glaze for two generous servings, or four thick slices. The pre-cooked onion softens the lean turkey's texture and keeps the center moist, while a second glaze layer creates a glossy top and savory-sweet edge.

For 4 servings, double the ingredients and bake in a 9x5-inch loaf pan or two smaller loaf pans. For larger batches, shape separate loaves instead of making one very thick loaf, because the outside will overbake before the center reaches 165 F. Keep the oven at 375 F and judge doneness by temperature, not by time alone. The glaze amount scales directly; any extra surface glaze is fully eaten, while any drip loss is minor and not counted separately in nutrition.

Step 1

Heat the oven and prep the pan

~1 min

Heat the oven and prep the pan.

Arrange a rack in the middle of the oven and heat to 375 F.

Line an 8x4-inch loaf pan with a parchment sling, leaving enough overhang to lift the loaf out later.

Set out a large mixing bowl, a small skillet, and an instant-read thermometer so the meatloaf can go together without extra fuss.

Step 2

Soften the onion

~11 min

Soften the onion.

Heat 1 tsp olive oil in the small skillet over medium heat.

Add 2 oz finely chopped yellow onion and cook, stirring often, for 4 to 5 minutes until it turns soft and translucent with a few light golden edges.

Stir in 1 tsp minced garlic and cook for 30 seconds more, just until fragrant.

Scrape the mixture onto a plate and let it cool for 5 minutes so it will not scramble the egg or tighten the turkey.

Ingredients
  • 16 oz total for recipeGround turkey
  • 1 tspOlive oil
  • 2 ozYellow onion
  • 1 tspGarlic
  • 1 total for recipeLarge egg
Step 3

Build the binder

~1 min

Build the binder.

In the large bowl, whisk together 1 large egg, 2 tbsp whole milk, 1 tbsp ketchup, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1/2 tsp kosher salt, and 1/4 tsp black pepper.

Stir in 1/2 cup panko breadcrumbs and let the bowl stand for 1 minute so the crumbs absorb the liquid and help the loaf hold together without becoming heavy.

Ingredients
  • 1/2 cupPanko breadcrumbs
  • 1Large egg
  • 2 tbspWhole milk
  • 1 tspDijon mustard
  • 1 tspWorcestershire sauce
  • 1/2 tspKosher salt
  • 1/4 tspBlack pepper
Step 4

Fold in the turkey

~1 min

Fold in the turkey.

Add 16 oz ground turkey and the cooled onion-garlic mixture to the bowl.

Use clean hands or a fork to fold everything together just until the mixture looks evenly combined and no dry breadcrumb streaks remain.

Stop as soon as it comes together, because overmixing makes turkey meatloaf dense and springy instead of tender.

Ingredients
  • 16 ozGround turkey
  • 2 oz total for recipeYellow onion
  • 1/2 cup total for recipePanko breadcrumbs
Step 5

Shape and glaze

~1 min

Shape and glaze.

Pack the mixture into the prepared loaf pan and smooth the top with damp hands, but do not press it down hard.

In a small bowl, stir together 1/4 cup ketchup, 1 tbsp packed light brown sugar, and 1 tsp apple cider vinegar until glossy.

Spread half of the glaze over the loaf, leaving the edges a little exposed so the top can brown around the sides.

Ingredients
  • 1 tbspPacked light brown sugar
  • 1 tspApple cider vinegar
Step 6

Bake until almost done, then finish the glaze

~25 min cook

Bake until almost done, then finish the glaze.

Bake for 25 minutes

Step 7

Broil it

After ~25 min

Remove the pan and spoon off any pooled liquid if there is a noticeable amount in the corners.

Brush the remaining glaze over the top, then return the loaf to the oven for 10 to 15 minutes more, until the center reaches 165 F on an instant-read thermometer.

If the loaf is cooked through but the glaze is still a little pale, broil it for 1 to 2 minutes, watching closely so the sugar does not burn.

Step 8

Rest and release

~10 min cook

Rest and release.

Let the meatloaf rest in the pan for 10 minutes so the juices settle and the slices stay neat

Step 9

Slice

After ~10 min

Lift it out with the parchment sling

transfer it to a cutting board, and slice into 4 thick pieces.

If a little juice collects on the board

spoon it back over the slices for extra flavor.

Step 10

Finish and serve

~120 min cook

Finish

Sprinkle the chopped parsley over the sliced meatloaf for a fresh finish.

The loaf should slice cleanly, with a tender crumb and a browned top, not a loose or crumbly center.

Refrigerate leftovers within 2 hours.

Ingredients
  • 0.1 ozFresh parsley
Step 11

Check the dish

After ~120 min

Check Turkey meatloaf and continue when ready.

Before you cook

What to get ready

Mixing bowl, loaf pan or rimmed tray as directed, thermometer and sharp slicing knife.

Cool the softened onion before folding it into turkey; prepare the glaze in a separate bowl.

If something needs adjusting

Slices crumble when cut

Let the loaf rest before slicing and use a sharp knife; avoid compressing the raw mixture into a dense block.

Center is difficult to check

Insert the thermometer into the thickest middle without touching the pan. Use 165°F for turkey and 160°F for beef; browning alone does not establish doneness.

Store for later

Slice cooled portions for prompt refrigeration in shallow containers. Reheat covered to 165°F with a little sauce or water to limit drying.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Freeze extra breadcrumbs and use remaining ground turkey in burgers.

Tips, swaps and questions

A little kitchen know-how

Cook the onion first and let it cool before mixing. That small step keeps the turkey from tightening around hot aromatics and helps the egg and breadcrumbs bind evenly. If the mixture seems soft, let it stand for a minute instead of adding more breadcrumbs, which can make the loaf dry and bready. Refrigerate leftovers within 2 hours.

Make it work for you

For a smokier glaze, replace the ketchup topping with the same amount of barbecue sauce plus the vinegar. Barbecue sauce browns faster because of added sugar, so watch the loaf closely during the last bake and tent it loosely with foil if the surface darkens before the center reaches 165 F.

Use more of your yellow onion and egg in beef meatloaf.

Can I bake this as a freeform loaf instead of in a pan?

Yes. Shape it into a 7 x 4-inch loaf on a parchment-lined sheet pan and start checking a few minutes early, because the exposed sides brown faster than a pan-baked loaf. Keep the oven temperature the same and use the thermometer as the real doneness guide.
