Before you cook
What to get ready
Heavy saucepan, spoon, colander and measuring jug.
Cut sweet potato into the specified small cubes so it softens while the beans simmer.
If something needs adjusting
Sweet potato remains chalky
Keep the pot gently simmering with enough liquid to cover the cubes; check tenderness with a fork, not the clock alone.
The pot thickens before serving
Beans and lentils absorb liquid as they stand. Add hot water a little at a time and taste again before adding more salt.
Store for later
Refrigerate in shallow portions and reheat to 165°F, stirring and adding water if needed. Freeze meal-sized portions if they will not be eaten soon.
Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions
A little kitchen know-how
Keep the sweet potato cubes small and similar in size. Large chunks take longer than the beans need.
Make it work for you
Use butternut squash in place of sweet potato and simmer until tender. Pinto beans work if you have an open can to use.
For another dinner built around beans, try bean and cheese burritos.
How can I make black bean chili thicker?
Mash some of the cooked beans into the liquid, then simmer uncovered for a few minutes. Stir often so the thickened chili does not catch on the bottom.
