Lamb lahmacun

Thin, crisp lamb lahmacun with a spiced ground lamb and tomato topping spread over yeasted dough, then baked hot until the edges blister and the center stays supple. This recipe makes 6 small lahmacun, best served folded with lemon. The dough is simple and elastic, while the topping stays moist enough to spread thinly without making the bread soggy.

This recipe is sized for 6 small lahmacun and works well on 2 standard half-sheet pans or 1 stone baked in batches. If doubling, mix the dough in a large bowl or stand mixer and keep the topping chilled between batches. Do not change the oven temperature; instead, bake in separate rounds so the oven stays fully heated for crisp edges.

Step 1

Mix and knead the dough

~10 min cook

Mix and knead the dough.

In a large bowl, combine 3 cups bread flour, 2 1/4 tsp instant yeast, 1 tsp granulated sugar, and 1 tsp kosher salt.

Add 3/4 cup warm water and 1 tbsp olive oil, then stir until a shaggy dough forms.

Knead by hand on a lightly floured counter for 8 to 10 minutes, or with a stand mixer on medium-low for about 6 minutes, until smooth and elastic.

The dough should feel soft but not sticky; add only a dusting of flour if needed.

Ingredients
  • 3 cupsBread flour
  • 2 1/4 tspInstant yeast
  • 1 tspGranulated sugar
  • 1 tspKosher salt
  • 3/4 cupWarm water
  • 1 tbspOlive oil
Step 2

Check lamb

After ~10 min

Check Lamb lahmacun and continue when ready.

Step 3

Let the dough rise

~60 min cook

Let the dough rise.

Shape the dough into a ball, place it in a lightly oiled bowl, and cover.

Let it rise at room temperature for about 60 minutes, until visibly puffed and about doubled in volume.

If your kitchen is cool, give it the full hour rather than rushing it; a relaxed dough rolls thinner and bakes more evenly.

Step 4

Check lamb

After ~60 min

Check Lamb lahmacun and continue when ready.

Step 5

Make the lamb topping

~3 min

Make the lamb topping.

While the dough rises, combine 12 oz ground lamb, 4 oz finely grated onion, 3 oz finely grated and lightly squeezed tomato, 2 tbsp tomato paste, 2 tbsp chopped flat-leaf parsley, 1 tsp minced garlic, 1 tsp ground cumin, 1 tsp sweet paprika, 1/2 tsp Aleppo pepper, 1/2 tsp black pepper, and 1/2 tsp kosher salt in a bowl.

Mix with a fork or your hands until the mixture looks cohesive and spreadable.

It should be loose enough to smear in a thin layer; if the tomato releases a lot of liquid, press out a spoonful or two so the topping does not puddle on the dough.

Ingredients
  • 1/2 tspKosher salt
  • 12 ozGround lamb
  • 4 ozYellow onion
  • 3 oz total for recipeTomato
  • 2 tbspTomato paste
  • 2 tbspFlat-leaf parsley
  • 1 tspGarlic
  • 1 tspGround cumin
  • 1 tspSweet paprika
  • 1/2 tspAleppo pepper
  • 1/2 tspBlack pepper
Step 6

Divide and shape the rounds

~12 min

Divide and shape the rounds.

Heat the oven to 475 F with an inverted sheet pan or pizza stone inside.

Line a second sheet pan with parchment.

Punch down the dough and divide it into 6 equal pieces.

Roll each piece into a 7 to 8 inch circle on a lightly floured surface.

Transfer the rounds to the parchment-lined pan, spacing them so they do not touch.

Step 7

Spread the topping thinly

~11 min

Spread the topping thinly.

Use about 1/6 of the lamb mixture for each round and spread it almost to the edge in a very thin, even layer, leaving only a narrow 1/4 inch border.

Press gently so the topping adheres without tearing the dough.

Brush or drizzle the exposed border with the remaining 2 tbsp olive oil for better browning and crisp edges.

Ingredients
  • 2 tbspOlive oil
Step 8

Bake until browned and set

~13 min cook

Bake until browned and set.

Slide the parchment with the lahmacun onto the hot inverted sheet pan or stone and bake for 11 to 13 minutes, rotating once if your oven has hot spots.

The bread should be browned at the edges, the lamb fully cooked, and the surface set with a few darker spots.

The topping must reach 160 F in the center.

If the center looks pale, give it 1 to 2 extra minutes; if the edges darken too fast, move the pan down one rack.

Step 10

Before you cook

What to get ready

Mixing bowl, rolling pin or floured work surface, baking tray or stone as directed and oven mitts.

Grate and lightly drain tomato and onion, and spread the raw lamb topping in a very thin layer.

If something needs adjusting

Bread browns before topping cooks

Keep topping thin and even; verify ground lamb reaches 160°F rather than judging only the crust.

Dough springs back while shaping

Cover and let it relax briefly, then continue stretching gently. Forcing tight dough makes thin patches and tears.

Store for later

Refrigerate pizza promptly in portions. Reheat to 165°F in an oven or skillet for a firmer base; freeze slices with separators for easier portioning.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the thinnest, most even crust, shape the dough rounds first, then let them rest 5 minutes before topping if they keep springing back. If you prefer more browning, bake one pan at a time on the preheated stone or inverted sheet pan rather than crowding the oven. Keep the lamb layer very thin, because a thick topping steams the bread instead of crisping it.

Make it work for you

Ground beef can replace the lamb, but it will taste less rich and may need an extra teaspoon of olive oil in the topping to keep it supple enough to spread. If you use a leaner meat, avoid overbaking because the topping can dry out before the bread browns.

Use more of your ground lamb and garlic in lamb burgers.

Can I make the dough ahead for lamb lahmacun?

Yes. After the first rise, cover the dough tightly and refrigerate it for up to 24 hours, then let it stand at room temperature until soft enough to roll. Chilling slows the yeast and improves flavor, but bake the lahmacun the same day you top them so the bread does not absorb too much moisture. Refrigerate leftovers within 2 hours and reheat to 165 F.
