This recipe is sized for one 9-inch pie and serves 2 as a main course. For 4 servings, make two pies rather than doubling into one larger pan. If you need a larger batch, use two 9-inch pie plates or a deep 10-inch dish and add a few extra minutes only to the filling set, not the crust blind-bake temperature.

Before you cook

What to get ready

Rolling pin, mixing bowls, baking tray or pie dish as directed, cooling rack and oven mitts.

Blind-bake the shell and cool the cooked mushroom-spinach mixture before adding eggs.

If something needs adjusting

Custard leaks watery liquid

Cook moisture out of the vegetables first and let the baked pie rest before cutting.

Dough becomes sticky while shaping

Chill it briefly rather than working in large amounts of extra flour. Keep the work surface lightly floured and handle gently.

Store for later

Refrigerate filled savory or fruit pastries in covered portions. Reheat perishable leftovers to 165°F, loosely shielding the top if it browns too quickly.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For a crisper bottom crust, bake the blind-baked shell on the oven's lower rack and place the pie plate on a preheated sheet pan. If your mushrooms are especially wet, cook them a minute or two longer before adding the onions so the filling does not leak into the crust.

Make it work for you

For a sharper, more rustic flavor, swap the mozzarella for an equal amount of fontina or Gruyere. If you want a lighter pie, replace the ricotta with cottage cheese that has been drained well, but expect a looser, less velvety filling.

Use more of your cremini mushrooms and ricotta in seafood lasagna.

Can I make this mushroom spinach pie ahead of time?

Yes. You can bake the crust and cook the filling a few hours ahead, then assemble and bake closer to serving. Fully baked leftovers should be cooled quickly and refrigerated within 2 hours, then kept at 40 F or below for 3 to 4 days. Reheat slices to 165 F before serving.
