Seafood lasagna

A creamy baked seafood lasagna with tender noodles, sautéed shrimp, lump crab, spinach, mushrooms, ricotta, and mozzarella in a lemony white sauce. It makes 6 generous servings in a 9x13-inch dish and slices cleanly after a short rest. The seafood is cooked before layering so the finished casserole bakes evenly without overcooking the filling.

For a doubled batch, use two 9x13-inch pans or one deep hotel-style pan rather than increasing the bake temperature. The sauce thickness and noodle coverage matter more than exact volume, so keep each layer thin enough to set evenly; if the pan is deeper, expect a longer covered bake before the top browns.

Before you cook

What to get ready

The recipe's baking dish, saucepan or skillet for the filling, oven mitts and thermometer.

Drain crab and cook excess moisture out of mushrooms and spinach before mixing the filling.

If something needs adjusting

Layers slide when served

Rest the baked dish before slicing and avoid flooding the layers with watery vegetables.

A larger batch heats unevenly

Use a second shallow dish rather than making a much deeper casserole. Check the center, not only the bubbling edges, before serving.

Store for later

Portion the cooked casserole into shallow containers for prompt chilling. Reheat the center to 165°F, covering if the topping browns too soon.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Freeze extra portions promptly; use remaining spinach in a smaller bean meal.

Tips, swaps and questions

A little kitchen know-how

For the cleanest slices, let the pan rest a full 15 minutes and use a sharp knife wiped dry between cuts. If your ricotta seems watery, stir it before measuring and bake uncovered at the end until the top is lightly spotted; if the sauce looks too thick while layering, loosen it with a splash of warm stock rather than extra milk.

Make it work for you

You can swap the shrimp and crab for 24 oz of mixed cooked seafood such as scallops and firm white fish, but keep the pieces small and fully cooked before layering. If using only shrimp, cut them into bite-size chunks so the casserole slices neatly. Avoid replacing the white sauce with a thin jarred sauce, which can make the lasagna watery.

Use more of your lasagna noodles and ricotta in lasagna.

Can I assemble this seafood lasagna ahead of time?

Yes. Assemble it up to 24 hours ahead, cover tightly, and refrigerate. Bake it straight from the refrigerator, adding about 10 minutes to the covered bake time if needed. Keep it refrigerated at 40 F or below, and reheat leftovers to 165 F before serving.
