Paneer stuffed peppers

Sweet bell peppers are split and baked until tender, then filled with a savory paneer mixture of onion, tomato, spinach, rice, and warm spices. A little yogurt keeps the filling creamy, and a final blanket of mozzarella helps the tops brown. This makes 4 stuffed pepper halves, enough for 2 servings as a main or 4 as a side.

For 4 servings, use 4 large bell peppers and double every ingredient, but bake in a larger dish so the halves are not crowded. Keep the same oven temperature and expect the final bake to stay close to the original time unless the peppers are packed tightly. Use a sheet pan with a rim if your baking dish is too small.

Step 1

Prep the peppers and oven

~3 min

Prep the peppers and oven.

Heat the oven to 400 F.

Line a small sheet pan or 9 by 13-inch baking dish with parchment or foil.

Brush the cut sides of the 4 bell pepper halves with a little of the 1 tbsp olive oil, then place them cut-side up on the pan.

If the peppers wobble, trim a thin slice from the rounded bottoms so they sit flat without cutting through the shell.

Ingredients
  • 4Large bell peppers, about 12 oz (340 g) total, halved and seeded
  • 1 tbspOlive oil
Step 2

Start the filling

~9 min

Start the filling.

Set a medium skillet over medium heat and add the remaining olive oil.

Cook the 2 oz chopped onion for 4 to 5 minutes, stirring often, until softened and translucent.

Add the 2 tsp minced garlic and cook for 30 seconds, just until fragrant.

Stir in the 4 oz chopped tomato, 1 tbsp tomato paste, 1 tsp cumin, 1/2 tsp coriander, 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp red pepper flakes.

Cook for 2 to 3 minutes until the tomato breaks down and the mixture looks glossy and thick.

  • 1/4 tspRed pepper flakes
Step 3

Fold in paneer and greens

~4 min

Fold in paneer and greens.

Add the 8 oz crumbled paneer and stir gently so the curds stay chunky instead of turning paste-like.

Cook for 2 minutes to coat the paneer in the spiced tomato mixture.

Add the 2 oz chopped spinach and the 2 tbsp water, then cook for 1 to 2 minutes more until the spinach wilts and the pan looks lightly saucy but not wet.

Ingredients
  • 2 ozBaby spinach
  • 2 tbspWater
Step 4

Finish the stuffing

~1 min

Finish the stuffing.

Turn off the heat and fold in the 1/2 cup cooked basmati rice and 2 tbsp plain Greek yogurt.

The filling should be cohesive and spoonable, not runny.

If it looks dry, add 1 more tbsp water.

If it seems loose, cook it 1 minute longer over low heat.

Taste and keep the seasoning balanced with the salty paneer in mind.

Ingredients
  • 1/2 cupCooked basmati rice
  • 2 tbspPlain Greek yogurt
  • 2 tbsp total for recipeWater
Step 5

Pre-bake the pepper shells

~10 min cook

Pre-bake the pepper shells.

Bake the empty pepper halves for 10 minutes on the middle rack to start softening them.

This step helps them cook through without leaving raw, crunchy walls after the filling goes in

Step 6

Remove the pan carefully, keeping the oven on

After ~10 min

Remove the pan carefully, keeping the oven on.

Step 7

Fill and top

~18 min cook

Fill and top.

Divide the filling evenly among the 4 pepper halves, mounding it slightly.

Before you cook

What to get ready

The recipe's baking dish, saucepan or skillet for the filling, oven mitts and thermometer.

Use cooked rice and par-bake pepper shells before spooning in the paneer filling.

If something needs adjusting

Filling browns while pepper stays hard

Choose similarly sized peppers and complete the shell pre-bake before stuffing.

A larger batch heats unevenly

Use a second shallow dish rather than making a much deeper casserole. Check the center, not only the bubbling edges, before serving.

Store for later

Portion the cooked casserole into shallow containers for prompt chilling. Reheat the center to 165°F, covering if the topping browns too soon.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the best texture, keep the paneer in noticeable crumbles instead of mashing it smooth. If your paneer is very firm, warm it briefly in the skillet with the tomato mixture so it softens and absorbs the spices. A drier filling is better than a wet one because the peppers release a little juice as they bake.

Make it work for you

If you want a sharper, saltier finish, swap the mozzarella for 1 oz crumbled feta. If you need a dairy-free version, replace the yogurt with 2 tbsp unsweetened cashew yogurt and skip the mozzarella, but expect a softer, less browned top.

Use more of your onion and tomato in chicken biryani.

Can I make these paneer stuffed peppers ahead of time?

Yes. You can make the filling up to 3 days ahead and refrigerate it in a covered container. For the best texture, assemble and bake the peppers just before serving. If you want to fully assemble ahead, refrigerate them unbaked and add 5 to 10 extra minutes to the oven time, then reheat leftovers to 165 F and chill any leftovers within 2 hours.
