Carrot gratin

A creamy carrot gratin with tender sliced carrots, garlic, thyme, and a sharp Gruyere-style breadcrumb topping. The carrots are briefly simmered so they finish evenly in the oven, then baked in a shallow dish until the sauce thickens and the top turns deeply golden. Makes 4 side-dish servings.

For a larger batch, use a wider shallow casserole rather than stacking the carrots deeply, or they will steam instead of brown. The oven temperature stays the same, but a thicker layer will need a longer bake and may need the foil removed near the end for browning. Do not double in a small pan.

Step 1

Heat the oven and prep the dish

~18 min

Heat the oven and prep the dish.

Set the oven to 400 F and butter a 2-quart baking dish or 9-inch square casserole.

Slice the peeled carrots into even 1/8-inch rounds so they cook at the same pace.

A shallow dish helps the gratin brown instead of steaming.

  • 1 1/2 lb total for recipeCarrots
Step 2

Start the carrot base

~5 min

Start the carrot base.

Set a large skillet or wide saucepan over medium heat.

Add the butter and olive oil, then cook the diced onion for 4 minutes until softened but not browned.

Stir in the minced garlic and cook for 30 seconds, just until fragrant.

Ingredients
  • 1 tbspUnsalted butter
  • 1 tbspOlive oil
  • 1/2 cupYellow onion
  • 2 tspGarlic
Step 3

Par-cook the carrots

~8 min

Par-cook the carrots.

Add the carrot rounds, kosher salt, black pepper, thyme, nutmeg, heavy cream, and whole milk to the skillet.

Stir well, bring the mixture to a gentle simmer, then cover and cook for 8 minutes, stirring once, until the carrots are just barely tender at the edges.

If the pan looks dry, add 2 tbsp water so the carrots do not catch on the bottom.

Ingredients
  • 1 1/2 lb total for recipeCarrots
  • 1 1/4 tspKosher salt
  • 1/4 tspBlack pepper
  • 1 tspFresh thyme leaves
  • 1/4 tspGround nutmeg

  • 1/2 cupWhole milk
Step 4

Add cheese and check the sauce

~3 min

Add cheese and check the sauce.

Uncover the pan and stir in 3/4 cup of the shredded Gruyere until melted.

The mixture should look lightly saucy, not soupy.

If there is excess liquid, simmer uncovered for 2 to 3 minutes to reduce it; the sauce should lightly coat the carrots.

Step 5

Assemble the gratin

~18 min

Assemble the gratin.

Transfer the carrot mixture to the prepared baking dish and spread it into an even layer.

In a small bowl, mix the panko breadcrumbs, remaining 1/4 cup Gruyere, and grated Parmesan.

Sprinkle the topping evenly over the carrots so every section browns.

Ingredients
  • 1/3 cup total for recipePanko breadcrumbs
Step 6

Bake until bubbling and browned

~22 min cook

Bake until bubbling and browned.

Bake uncovered for 18 to 22 minutes, until the gratin is bubbling around the edges and the topping is deep golden brown.

If your oven browns unevenly, rotate the dish once near the end.

The carrots should be fully tender when pierced with a knife.

Step 7

Finish and serve

Before you cook

What to get ready

The recipe's baking dish, saucepan or skillet for the filling, oven mitts and thermometer.

Slice carrots thinly and evenly; thick rounds will not soften at the same rate.

If something needs adjusting

Crumb topping browns before carrots soften

Cover loosely and continue baking until a knife slides through the carrots.

A larger batch heats unevenly

Use a second shallow dish rather than making a much deeper casserole. Check the center, not only the bubbling edges, before serving.

Store for later

Portion the cooked casserole into shallow containers for prompt chilling. Reheat the center to 165°F, covering if the topping browns too soon.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Use extra carrots in soup and freeze leftover breadcrumbs dry.

Tips, swaps and questions

A little kitchen know-how

Slice the carrots evenly and use a shallow baking dish so the gratin finishes with a creamy center and browned top. If the sauce seems loose before baking, simmer it a minute longer in the skillet rather than adding more cheese, which can make it greasy. The resting time is important for clean scoops.

Make it work for you

For a milder version, replace Gruyere with Swiss cheese, but keep at least some Parmesan in the topping so it browns well. For a lighter gratin, use half-and-half instead of heavy cream, though the sauce will be a little less rich and may need the full bake time to thicken.

Use more of your carrots and heavy cream in parsnip soup.

Can I make carrot gratin ahead of time?

Yes. Assemble the gratin up to the breadcrumb topping, cover, and refrigerate for up to 24 hours. Bake it straight from the refrigerator, adding a few extra minutes if needed until the center is hot and the top is browned. Leftovers should be refrigerated within 2 hours and reheated to 165 F.
