Peri peri chicken

Smoky, bright peri peri chicken thighs are marinated in chili, garlic, lemon, and paprika, then roasted until the skin is deeply bronzed and the meat is juicy. This recipe makes 4 chicken thighs, about 2 hearty servings, with a sticky pan sauce that clings to the chicken.

For a larger batch, keep the oven at 425 F and use a larger sheet pan so the thighs stay spaced apart. Do not tightly pack the pan. If doubling, roast on two pans with a rack position between them and rotate the pans halfway through for even browning; the cook time may be similar, but the pan arrangement matters more than the ingredient scale.

Step 1

Make the peri peri marinade

~3 min

Make the peri peri marinade.

In a medium bowl, whisk together 1/4 cup olive oil, 2 tbsp lemon juice, 1 tbsp red wine vinegar, 2 tsp minced garlic, 1 tbsp smoked paprika, 1 tsp crushed red pepper flakes, 1 tsp dried oregano, 1 tsp granulated sugar, 1 tsp kosher salt, and 1/2 tsp black pepper until the sugar dissolves and the mixture looks evenly red and glossy.

Ingredients
  • 1/4 cupOlive oil
  • 2 tbspLemon juice
  • 1 tbspRed wine vinegar
  • 2 tspGarlic
  • 1 tbspSmoked paprika
  • 1 tspCrushed red pepper flakes
  • 1 tspDried oregano
  • 1 tspGranulated sugar
  • 1 tspKosher salt
  • 1/2 tspBlack pepper
Step 2

Coat the chicken and marinate

~510 min

Coat the chicken and marinate.

Pat 1 1/2 lb chicken thighs dry with paper towels, then add them to the bowl and turn to coat every surface, including under the skin where it lifts easily.

Set the thighs on a plate or in a shallow dish and scrape any remaining marinade over the top.

Let them sit at room temperature for 20 to 30 minutes while you heat the oven, or refrigerate up to 8 hours if you want a stronger chili-garlic flavor.

If refrigerated, bring them back toward room temperature briefly while the oven preheats.

Step 3

Heat the oven and prepare the pan

~1 min

Heat the oven and prepare the pan.

Position a rack in the upper-middle of the oven and heat to 425 F.

Line a rimmed sheet pan with foil or parchment, then set a wire rack on top if you have one.

The rack helps render the skin evenly; if you do not have one, roast the thighs directly on the lined pan and expect a slightly softer underside.

Step 4

Arrange for roasting

~1 min

Arrange for roasting.

Place the chicken thighs skin-side up on the rack or sheet pan, spacing them apart so the skin can brown instead of steam.

Spoon any clinging marinade over the top, but do not pool it heavily under the chicken.

  • 1 1/2 lb total for recipeChicken thighs, bone-in skin-on
Step 5

Roast until the skin begins to crisp

~20 min

Roast until the skin begins to crisp.

Roast for 20 minutes, then rotate the pan for even color.

At this point the skin should be turning deep orange-red at the edges and the fat should be starting to render.

If there is a lot of liquid collecting

spoon the pan juices over the tops once so the spices do not dry out.

Step 6

Finish cooking and char the surface

~15 min cook

Finish cooking and char the surface.

Continue roasting 12 to 15 minutes longer, until the thickest part of the chicken reaches 165 F and the juices run clear when pierced near the bone.

For extra char, switch to broil for 1 to 2 minutes at the very end and watch closely, because the sugar and paprika can darken quickly.

Pull the tray as soon as the skin is blistered and bronzed, not blackened.

Before you cook

What to get ready

Rimmed baking tray or oven-safe dish, tongs, oven mitts and instant-read thermometer.

Keep marinating thighs refrigerated and reserve clean marinade separately if wanted for finishing.

If something needs adjusting

Skin browns before the thigh is cooked

Move the tray farther from the heat or shield loosely; check the thickest meat reaches 165°F away from bone.

Browning does not match doneness

Use a thermometer in the thickest meat, away from bone, and cook poultry to 165°F. Shield a darkening top while the center finishes.

Store for later

Refrigerate cooked poultry in shallow portions. Reheat to 165°F; keep crisp coatings uncovered for part of reheating if needed for texture.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Make the ingredients go further

Use leftover lemon and herbs in a yogurt sauce.

Tips, swaps and questions

A little kitchen know-how

For the best skin, dry the thighs well before marinating and avoid crowding the pan. If your paprika is very sweet, keep the broil brief so the coating turns mahogany instead of bitter. A wire rack is worth using here because it lets rendered fat drip away and keeps the bottom from going soggy.

Make it work for you

If you want a milder version, replace half of the crushed red pepper flakes with extra smoked paprika and keep the lemon juice the same. Boneless thighs also work, but they usually finish sooner, around 18 to 24 minutes total, and will not develop quite as much rendered skin flavor as bone-in thighs.

Use more of your lemon juice and garlic in pasta with asparagus.

Can I use boneless chicken thighs instead of bone-in?

Yes. Boneless thighs work well with this marinade and stay juicy, but they cook faster and brown a little differently. Roast them at 425 F on a lined sheet pan for about 18 to 24 minutes, depending on thickness, and still check for 165 F in the center. Because they have less bone and skin structure, skip the broil if the edges are already dark.
