Scallop chowder

A creamy scallop chowder with bacon, onion, celery, potato, and a lightly thickened milk-cream broth. The scallops are added at the end so they stay tender and just opaque. This makes 2 hearty servings, best finished with parsley and oyster crackers for a classic chowder bowl.

For a larger batch, scale ingredients in a wider pot rather than a deeper one so the potatoes cook evenly and the scallops can be added in a single layer. Keep the same heat level and timing for the scallops, even if the soup is doubled, because they overcook quickly.

Step 1

Render the bacon

~5 min

Render the bacon.

Set a 3-quart saucepan or small Dutch oven over medium heat.

Add the 4 oz diced bacon and cook 4 to 5 minutes, stirring, until the fat renders and the bacon starts to brown.

If the pan looks dry before the bacon browns, add the 1 tbsp butter now so the vegetables do not scorch.

Ingredients
  • 4 ozBacon
  • 1 tbspUnsalted butter
Step 2

Soften the aromatics

~4 min

Soften the aromatics.

Add the 4 oz diced onion and 2 oz diced celery to the bacon fat.

Cook 4 minutes, stirring often, until the onion looks glossy and the celery begins to soften.

Sprinkle in the 1/2 tsp kosher salt and 1/4 tsp black pepper so the vegetables season evenly as they cook.

Ingredients
  • 4 ozYellow onion
  • 2 ozCelery
  • 1/2 tspKosher salt
  • 1/4 tspBlack pepper
Step 3

Build the chowder base

~1 min

Build the chowder base.

Stir in the 8 oz potato cubes, 2 tbsp flour, 1 tsp dried thyme, and 1 small bay leaf.

Cook 1 minute, stirring constantly, so the flour coats the vegetables and loses its raw taste.

The mixture should look pasty but not browned.

Ingredients
  • 8 ozRusset potato
  • 2 tbspAll-purpose flour
  • 1 tspDried thyme
  • 1Small bay leaf
Step 4

Add the liquids and simmer

~12 min

Add the liquids and simmer.

Pour in the 1 cup clam juice, 1/2 cup water, and 1 cup whole milk while stirring to prevent lumps.

Bring just to a gentle simmer over medium heat, then reduce the heat to medium-low.

Cook 10 to 12 minutes, stirring occasionally, until the potato is nearly tender and the broth lightly thickens.

If it seems too thick, add a splash of water; if too thin, keep simmering before adding the scallops.

Ingredients
  • 1/2 cupWater
  • 1 cupWhole milk
  • 10 oz total for recipeBay scallops
Step 5

Finish the base with cream

~2 min

Finish the base with cream.

Stir in the 1/2 cup heavy cream.

Keep the chowder at a bare simmer for 2 minutes.

Do not let it boil hard or the dairy can look grainy.

Ingredients
  • 1/2 cupHeavy cream
Step 6

Cook the scallops gently

~3 min

Cook the scallops gently.

Add the 10 oz bay scallops in an even layer and simmer 2 to 3 minutes, stirring once or twice, just until they turn opaque and firm.

Bay scallops overcook quickly, so remove the pot from the heat as soon as they lose translucence.

Ingredients
  • 10 oz total for recipeBay scallops
Step 7

Brighten and adjust

~4 min

Brighten and adjust.

Stir in the 1 tbsp lemon juice and 1 tbsp chopped parsley.

Taste and adjust with a small pinch more salt only if needed, keeping in mind the clam juice, bacon, and crackers already contribute salt.

Ingredients
  • 1 tbspParsley
  • 1 tbspLemon juice
Step 8

Serve hot

~2 min

For a thicker chowder, let the pot stand off the heat for 2 minutes before ladling so the broth settles around the potatoes and scallops.

Step 9

Serve meal

~1 min

Once all dishes are cooked and ready, plate and serve the meal together.

Scallop chowder: Serve hot.

Scallop chowder: Ladle the chowder into warm bowls and top with the 1 cup oyster crackers just before serving so they stay crisp.

Before you cook

What to get ready

Heavy soup pot, ladle, chopping board and an immersion blender only if the method calls for blending.

Pat scallops dry and keep them separate until the potatoes and chowder base are ready.

If something needs adjusting

Scallops become rubbery

Add them near the end and simmer gently only until cooked; do not boil them while potatoes soften.

Soup tastes saltier after simmering

Reduction concentrates salt. Start with low-sodium broth and adjust seasoning near the end; loosen an over-reduced soup with water.

Store for later

Divide soup into shallow containers for prompt chilling rather than leaving a large hot pot on the counter. Reheat to 165°F while stirring so the center heats evenly.

Refrigerate perishables within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below; use refrigerated leftovers within 3–4 days. USDA storage and reheating guidance.

Tips, swaps and questions

A little kitchen know-how

For the cleanest scallop texture, dry the scallops well before adding them and keep the final simmer very gentle. If you use sea scallops instead of bay scallops, cut them into bite-size pieces and increase the final cook time only until they are just opaque, not rubbery.

Make it work for you

If you do not have bottled clam juice, use an equal amount of low-sodium fish stock and add 1 teaspoon extra salt only after the chowder has simmered. Avoid swapping in plain water alone, because the broth will taste flat and the bacon will carry less of the chowder flavor.

Use more of your potato and whole milk in quinoa corn chowder.

Can I make this chowder ahead of time?

Yes. Make the base through the potato simmer, then cool it quickly and refrigerate within 2 hours. Reheat gently to 165 F, stir in the scallops during the last few minutes, and finish with lemon and parsley. The dairy broth holds better if the scallops are cooked fresh at serving time.
